Creamy herb sauce

Once you have finished creating your own herbpatch or harb window box, why not enjoy a BBQ fish recipe with your own Creamy Herb Sauce.

Ingredients

  • 1 carton (8 oz.) lowfat sour cream
  • 1/4 cup reduced-calorie mayonnaise or plain low-fat yogurt
  • 1/4 cup fresh parsley sprigs
  • 1 tbsp. fresh minced dill
  • 1 tsp. fresh minced tarragon
  • Salt and pepper
  • 1/4 cup capers, drained

Directions

Place all the ingredients, except the capers, in the work bowl of a food processor. Process until smooth. Stir in the capers and transfer to a serving bowl. Cover and chill for up to 2 days.

Rhubarb crumble

Ingredients

  • 400gms chopped rhubarb
  • 2 tablespoons orange juice
  • 150 gms granulated sugar
  • 1/4 teaspoon cinnamon
  • 1 tablespoons butter, cut in small pieces

Ingredients - Crumble mixture

  • 60 gms cup melted butter
  • 80 gms brown sugar
  • 100 gms sifted plain flour
  • A pinch of salt
  • 1/4 teaspoon baking soda
  • 150 gms quick cooking oats
Preparation

Arrange diced rhubarb in a buttered 8-inch square baking dish. Splash with orange juice, 150 gms granulated sugar, cinnamon, then dot with the 1 tablespoon of cut up butter.

Combine melted butter with brown sugar. Sift together the flour, salt, and baking soda; mix with oats. Combine the flour oat mixture with the brown sugar and melted butter mixture. Spread over rhubarb. Bake at 190C for 40 minutes. Serve warm, with ice cream or whipped topping.
